Banana Bread

I eat a lot of bananas.  And I buy them in bulk.  Sometimes I have some leftovers at the end of the week.

I sometimes freeze them and I sometimes make banana bread with them.

I will admit, its not the healthiest recipe, but it tastes great, freezes well and I don’t eat a ton at any one time.

So here it is:

3 bananas (over ripe so they are mushy)

2 eggs

1/2 cup nuts (optional)

1/2 cup shortening or shortening substitute

1/2 teaspoon salt

1/2 tea spoon baking soda

1 tea spoon baking powder

1/2 cup sugar

1 1/2 cup flour

Place in loaf pan and cook at 350 degrees for an hour and 15 minutes.

I love to reheat it in the toaster over and crisp up the sides 🙂
