I’m a big fan of crockpot meals. You can put everything in and go about your day. I’m always hungry and tired at the end of the day (who isn’t?) and I love having dinner made for me.
I put in the following ingredients:
4 cups veggie stock (Give or take). I added a bit more as some of it cooked off in the crockpot.
Approx. 4 cups white beans (Two bags of dried beans soaked over night)
I put the following into a mini food processor. If you like a chunkier soup, just cut them by hand:
3 cloves garlic
1 medium yellow onion
6 organic carrots
6 celery stalks
1 bay leaf
1 T olive oil
1 T parsley
1/2 tsp thyme
salt to taste (You may want to add more salt and pepper once it is done.)
This cooked for most of the day. While it is done earlier, I wanted to beans to be soft. It made a LOT of soup, so I’m going to freeze some to have for lunches, etc. My husband who is NOT a fan of vegan or gluten free meals, loved this one.
I meant to take pictures as I cooked it. However, here is the finished soup. (Half gone!)
