This isn’t a crockpot or skillet meal. However, it IS easy and quick to make. You can put these mini meatloaves together a few days in advance and store them (covered) in the fridge. Then, just pop them in the oven about 15 minutes before you’re ready to eat. Pair them with a vegetable and you have an easy, fast and healthy meal.
Ingredients:
1 pound ground turkey (you could use beef) I buy mine at Costco in bulk (4 pounds at a time) and defrost it the night before
1/2 cup panko breadcrumbs
1/4 cup French’s fried onions
1 tablespoon garlic powder
1 tablespoon onion powder
1 pinch of salt
1 dash of Emeril’s Essence (optional)
1 egg
Here’s the fun part…
Toss everything into a bowl and stir. (Now that’s easy isn’t it?)
Take a muffin pan and spray it with non stick spray. Using a spoon or your hands, fill the sections of the pan with the mixture.
Flatten them out with a spoon and put a tiny dab of ketchup on top. Then, add a few more fried onions.
Bake at 350 for 10-15 minutes. (Depends on your oven’s heat) Use a meat thermometer to determine if they are done.
These cook much faster than a traditional meatloaf so this is great for a busy school night.
