Holiday Cooking in Under 10 Minutes

MinuteRice Meal

The holidays are an amazing time of year.  BUT, they are hectic, busy and sometimes even stressful.  While we’re all focusing on cooking those big meals, sometimes those other meals in between get over looked. I’m here to share with you a super fast and easy meal to make for your family.  You can double or even triple it and feed guests at well!

So this recipe is versatile and easy.  It dirties exactly two pans.

These are things I always keep in my pantry.  Minute ® Rice cooks fast so it’s a go to for me when I’m running behind, failed to plan (oh no) or just need something last minute.

Here’s what’s included:

2 cup of Brown Minute ® Rice

1 Can of corn-regular or creamed

1 Jar or salsa

1 Can of beans (I used black beans)

Cheese to taste

So all you have to do is start the water boiling for the rice.  I made two cups of Minute ® Rice.  Drop the rice in when the water boils.  Cooking the rice only takes five minutes!  I used brown rice, which is gluten free.  Minute ® Rice also comes in white rice or a their newest creation, Multi-Grain Medley.

In another pan, warm up the salsa, corn and beans.

Cooking

Once the rice is done, add it to the mix.  Season to taste.  You can use salt, pepper, sriracha, taco seasoning, and more.  If you want, add chicken to the dish (stir fry in another pan).

The best thing about this dish is that kids LOVE it.  Eat it in a bowl, in a burrito, or even with tortilla chips!  It’s yummy, healthy AND easy.

Finished Meal

The whole cooking process takes about 10 minutes and the ingredients are things you probably already have on your pantry. They are also inexpensive.  Make this in advance and keep it in the fridge for a quick, week night meal.  This is an awesome meal for guests who are staying with you in between those big celebratory meals.
