Most of us bake something special during the holidays. I bake a lot of cookies. Then, I give them out as I see people. I should clarify, I bake a LOT of cookies. It takes me a day or more, I got through a ton of supplies and the outcome is trays and trays of cookies. (It’s an Italian tradition I learned from my husband’s grandmother called an Italian cookie tray.)
Anyway, I have learned that I just don’t have the uninterrupted time to bake all at once like I used to. I really hated to give up this tradition so I started experimenting with freezing cookies. Most cookies will freeze and defrost with no effect to the taste or constancy. If you’re unsure, try a few test cookies.
If you start baking around Thanksgiving and then give the cookies out around Christmas, they won’t be frozen long enough for anyone to know 🙂 So, if you have some free time this weekend, or even on a week night, start baking! Make a double batch and freeze some for friends and family to take home.
