In my attempts to find fast and easy breakfasts that are yummy AND healthy, I’ve been playing around some some of my favorite ingredients….peanut butter and jelly. While this recipe might not be for everyone, it’s packed with energy providing foods, can be prepared in advance and is satisfying and delicious. I’m calling it a “shake” because you shake the jar to mix everything together.
You will need:
Almond Milk
Oats
Chia Seeds
Peanut Butter
Jelly
Sugar (optional)
A Mason jar or another container that can be used on the go and placed in the fridge

In the container you’ve selected, place 1/4 cup of oats, 1/2 cup almond milk, a tablespoon of sugar and a teaspoon of chia seeds. Now comes the fun part…..shake the jar until everything is well combined. You could add in grapes, raisons or anything else you like at this point. Just keep in mind you won’t be eating this right away so you want to make sure everything will stay fresh.

Overnight the chia seeds will soften and the oats will absorb the milk. It becomes a pudding like mixture. The sugar is dissolved and the mixture is sweet. The next step is the most fun. Simply top the mixture with peanut butter (chunky OR smooth) and jelly! Then, grab a spoon and EAT! This always tastes so decadent. It has protein, cards and loads of healthy energy to keep me moving. I’ve also been known to have this as an afternoon snack 🙂
