Cooking for the holidays isn’t easy. You need a lot of ingredients, and a lot of time. However, who wants to be in the kitchen when you could be spending time with your family? I set out to create a delicious and easy recipe for you to create quickly. This recipe is great for the meals leading up to the holidays (when guests arrive the day BEFORE the real celebration) or to be used as a side dish at the big event.

Here’s all you need:
Litehouse Italian Herb Blend (you can see it on their site here)
Litehouse Thai Peanut Dressing (see it here)
Litehouse Feta Cheese (see it here)
One box pasta (I used rotini)
One Red Pepper
1 Bag Mini Pepperoni (optional)

Steps:
Start by boiling the water for the pasta. I like to put a little salt in the water for flavor.
While this is boiling, grab a bowl.
Add two tablespoons of Italian Herb Blend
Cut up the red pepper into small chunks and add to bowl.
Add as much or as little of the bag of pepperoni as you’d like. This adds protein to the dish. However, leaving it out or using tofu pepperoni makes this a vegetarian friendly dish.
Once the pasta is done, drain it and add to the bowl with other ingredients.
Add about half of the jar of the Thai Peanut Dressing. It’s a little spicy so add as much or as little as you’d like.
Stir everything well.
Cover and put in fridge for later.
When you are ready to serve top with the Feta Cheese.
