There are lots of overnight oats recipes out there. I’ve been Pinning them for a while. (And putting off making one.) I finally decided that I would make my own version of overnight oats with all of MY favorite things. That being said, this recipe is customizable and easy to change every time you make it.
I didn’t cook mine over night as I wanted to watch how long the process took. However, nothing burned and on low, I wouldn’t worry about this cooking in the kitchen over night. The whole kitchen smelled amazing while cooking this and I couldn’t wait to dive in. While this is meant to be a breakfast dish, you could have this as an afternoon snack for sure.
Here’s what I put into the crockpot:
1 cup oats
1.5 cups almond milk
1 teaspoon cinnamon
1 cut up apple (I used a Gala)
1 ripe banana (mush it up a little)
1 teaspoon ground chia seeds (you could use whole as well)
That’s it! Let it cook and you can stir it from time to time if you want. However, it makes a healthy, filling and oh so tasty meal! Add fruit or honey to the top to serve and it looks fancy enough to serve at brunch. 
The crockpot you see here is from Brylane Home. It’s a power house multi tasker. You can use it as a crockpot (as seen in the photo), an electric skillet or you can use the “pot” piece as a pan on the stove. There is even an insulated bag you can put this in for parties and use on the go. It’s really light weight too. Usually crockpots are heavy and hard to get down off of shelves. It packs a punch and is just the right size for a small meal.

I added some berries and another dash of cinnamon when I ate it. This was awesome right out of the crockpot, and reheated. This would also be awesome before or after a workout! See below for the finished product.
