Easy Weekend Crockpot Cooking~White Chicken Chili

The winter months can always be made a little better with a good bowl of chili. This recipe is good for chilly winter nights and it’s also a great meal to have on hand as families visit during the holidays. Make a double batch and freeze some. It’s another easy, go to meal that you most likely have the mixings for in the pantry.

White Bean Chicken Chili

BeanChicChiliStepsHere’s what I put into the crockpot:

1/2 teaspoon garlic powder

1/2 teaspoon oregano

dash of pepper (fresh ground)

dash of salt

1 teaspoon cumin

3 frozen chicken breasts

1 bag of white beans (soaked over night)

3 cans of chicken broth

1 small can of green chilies

Put it all in and set to cook on low. A few hours in, cut up the chicken. It’s usually tender enough to shred with two forks.

When you’re ready to serve add in some shredded cheese and sour cream and serve!

This is a low fat, high protein meal that even kids will love!
