This week’s crocking pot cooking meal is one of my favorites. I LOVE chicken piccata however, I often don’t make it because it’s slightly more time consuming than I can manage during the week. So, i decided to try to find a crockpot version and this ones a winner. It’s easy to make and fast. There are a few more steps than a “toss it all in” crockpot meal, but they are worth it.
This is a modified version of the Chicken Piccata recipe in 365 Slow Cooker Suppers.
Ingredients:
4 boneless chicken breasts (I used frozen ones that I buy in bulk at Costco)
2 tablespoons flour
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1 small onion (yell0w) cut up
1/4 cup chicken broth or white wine (I used wine)
2 lemons (juiced)
2 tablespoons sugar
2 tablespoon butter (melted)
1 tablespoon olive oil
In a large freezer bag combine the chicken, flour, salt and pepper. Shake until everything is coated. Put this into the crockpot and cover with the onions.
Then, whisk together the lemon juice, oil, wine, sugar and butter. Pour it over the top and cook until the chicken is done and can be pulled apart. Serve over rice or pasta. (I prefer rice)
You can also add capers and mushrooms to this dish if you want!
