As playoff season rolls around, I wanted to share with you a recipe for a healthy bean dip that’s easy to make and you can buy everything you need in advance so there’s no need to run around right before your party. I’ve tried a lot of home made dips in the past and they are usually laden with creams, and other high fat items. This one is leaned out for you. I want you to know that you can play with it and make it your own.
You will need:
Taco seasoning (1 tablespoon)
Refried beans (I used fat free)
A can of green chiles
Salsa (about a cup)
Baking dish (9×9 square or similar)
Mexican shredded cheese (about 2 cups)
Spread the beans out on the bottom of the dish. If the dish is not non-stick, you may want to use a little cooking spray underneath. Then, mix in the taco seasoning. I like to kind of make a layer of it on the top of the beans.
Open the can of chilis and drain it out over the sink or garbage can. Then, spread them out on top. Don’t worry, this doesn’t make the dish super spicy!
Add the salsa as your next layer. You can use mild, medium or hot according to your taste. I used about a cup of salsa. You really just want to make sure you have a nice layer on top of the chilis.
You’re going to bake the mixture, as is, for about 25 minutes. After that time, add some Mexican cheese on top (I used about 2 cups) and then bake again for a few minutes, just for the cheese to melt.
Once it’s done you can add anything else you’d like; olives, peppers, extra seasoning, etc. Make it your own. One thing I like to do is add another can of beans…it almost doubles the recipe and doesn’t double the cost. It’s a great way to “bulk up” the recipe for a party with a large crowd!
Of course, this is also great for a week night treat for a family movie night in! Eat with tortilla chips and enjoy!
