This is one of the easiest meals and once it’s done, you can serve them lots of different ways. These cook quickly too so if you forget to put dinner in the crockpot in the morning, you have plenty of time to catch it before dinner time rolls around.
Here’s what’s in the crockpot:
1 can of black beans (rinsed)
1 can of kidney beans (rinsed)
1 teaspoon cumin
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons chili powder
Kosher salt and pepper to taste
1 tablespoon olive oil
1 jar salsa
2 cups rice
Chicken breast. I used three frozen breasts.
Stir along the way and pull apart the chicken.
Once these are done, put them into a bowl with cheese and or sour cream. Serve over tortilla chips, in taco shells or roll the mixture into burritos. Whatever your family prefers. These are also great for a crowd so this is an awesome meal to ahem on hand as guests arrive or as you’re finishing up last minute decoration, shopping or wrapping.
