Making breakfast is a problem of mine…I’ve talked about it in the past. BUT I’m learning ways to eat healthy, even during a crazy, busy, rushed morning. (Yes, even the self employed have those!) So I once again set out to make something that was healthy, fast and would give me the energy I need to make it through a long, hectic day.
I’m going to give you the ingredients for two types of smoothie. You can make these fresh every day or preassemble them. Preassembled smoothies can be put into mason jars or plastic baggies and placed in the fridge or freezer.
The first set of smoothies used the following:
Baby kale (grinds up better than regular kale)-about a hand full
Mango-fresh or frozen-about a hand full or less
Chia seeds-Tablespoon
Lemon-one squeeze
These are the items to assemble into your jars or bags. Do not add the coconut water at this time. When you’re ready to make the shake, put all the ingredients into your blender and add the coconut water. I added about a 1/2 cup.
The second set of smoothies included:
Baby Kale-handful
Chia seeds-tablespoon
One banana
Frozen Raspberries-Handful
Again, don’t add the milk until you’re ready to blend. You could use yogurt, regular milk, soy milk or almond milk. They are all awesome!
I used mason jars to freeze the ingredients. I put a small piece of washi tape on the top of each one with what needed to be added at the time of blending. Personally, I use the Ninja as it grinds up the fruits and veggies into a liquid smoothie, and it still has all the fiber that you usually lose in juicing.
Here’s what the smoothie looks like once it’s blended…Don’t be afraid, it’s delicious!
